Recanati Chardonnay is an elegant, full-bodied, smooth white wine with an apple and tropical fruit bouquet accentuated by nuances of coconut and nutmeg.

Best served well-chilled as an enjoyable aperitif or together with any kind of fish dish. May be served slightly chilled as an accompaniment to meat and poultry, cream-based pastas or with “creamy” cheeses such as Brie, chevre, etc.

Recanati’s Chardonnay grapes derive from two vineyards, Kerem Ben Zimra and Manara, both located at an optimal elevation of 800m above sea level. Cool summer evenings and rocky soil are conducive to preserving the unique features of this grape variety.

At the beginning of September, when the grapes reached optimal ripeness, they were hand-harvested and placed in small 350 kg containers. These were delivered to the winery in a refrigerated state, In order to ensure the grape’s wholeness and quality.

The Chardonnay is fermented in small French oak barrels and aged sur lie for a period of eight months. Once in three weeks the barrels are carefully mixed with the lees (batonnage) in the Burgundy tradition. This process enhances the wine’s creaminess and allows its fruity flavors to blend with the sharp wood aromas of the barrel.
